Honey Oat Banana Bread

Banana bread is one of the ultimate loafs because it can be combined with a huge variety of flavors and ingredients while still tasting delicious in each unique way.


When I was creating this recipe, I wanted to not only create a flavor combination that was original and tasty, but also one that was full of natural ingredients and contained minimal added sugar. The honey and bananas obviously can account for much of the sweetness in this bread, but I also added a splash of vanilla and a bit date paste to add a little extra because, well, yum.


I will keep this post short and sweet so you can get right to baking! I hope you all love this sweet yet healthy banana bread that you can enjoy at any time of the day. Honey Oat Banana Bread

Prep Time: 15-20 min

Cook Time: 55-65 min

Total Time: 70-85 min

Serves: 1 loaf


Ingredients

1 flax egg (1 tbsp ground flaxseed + 3 tbsp water, stir & allow to sit ~5 min to thicken)

3 tbsp date paste (5 pitted dates + 2-3 tbsp water, smash with a fork until smoothish paste forms)

3 ripe bananas, mashed (+1 more banana for topping if you would like)

1/2 cup honey

1/4 cup vegan butter, melted (can also use melted coconut oil)

1 tbsp apple cider vinegar

1 tsp vanilla

1 1/2 cup all-purpose flour

1/2 cup oats (+ an extra tbsp or so for topping if you would like)

1 tsp baking soda

1/2 tsp salt


Instructions

  1. Preheat oven to 350 degrees (F). Grease a loaf pan using preferred method (I like to dip a paper towel in coconut oil and smear the oil over bottom and sides of the pan).

  2. Prepare flax egg and date paste mixtures, set aside.

  3. In a large mixing bowl, add 3 ripe bananas and use a fork to mash. Add flax egg, date paste, honey, melted vegan butter, apple cider vinegar, and vanilla. Stir or whisk until well combined. Mixture will be slightly lumpy, and that is OK!

  4. Add dry ingredients (flour, oats, baking soda, and salt. Stir to combine. Do not over-mix! (This can lead to a flatter loaf, and we want our bread to rise while it bakes!)

  5. Pour bread batter into loaf pan. Top with additional banana if you like - you can slice it down the middle, slice into disks, whatever you want! Then sprinkle some oats on top of the loaf, as well.

  6. Bake at 350 for 55-65 min until inserted knife or toothpick in the middle of the loaf comes out clean. Allow to cool 15-20 min before trying to remove from pan. Slice, drizzle with honey or a smear of vegan cream cheese, and enjoy!
