Honey Garlic Cauliflower Wings

Wings are such a feel-good food and always seem to hit the spot regardless of the time of year. In my opinion delicious wings come down to a few main components: tenderness, breading/batter, and sauce.


While tenderness of chicken can vary greatly, we can use vegetables such as cauliflower that will always be perfectly tender after cooking! Breading can be a little time consuming, but I think it is always fun to get a little messy while cooking! Making tasty batter is all about texture, spices, and wet-to-dry ingredient ratio. Sauces are the part that we can experiment with most! For this recipe, you will prepare a delicious honey garlic sauce that combines sweetness from honey, flavor from garlic, and a kick of hot sauce to make the perfect flavor punch for your appetizer or dinnertime wing dish!

Honey Garlic Cauliflower Wings

Prep Time: 25 min

Cook Time: 30 min

Total Time 55min


Ingredients

Wings

2-4 tbsp olive oil

1 medium head of cauliflower, cut into bite-sized florets

2 flax eggs (2 tbsp ground flaxseed + 6 tbsp water, stir and let sit 3-5 min to thicken)

1 1/4 cup panko bread crumbs

1/3 cup flour

1/2 tsp salt

1/2 tsp black pepper


Honey Garlic Sauce

1/3 cup warm water

1 tbsp corn starch

1/2 tsp garlic powder (or 1-2 garlic cloves, minced)

2 tbsp honey

1 1/2 tbsp soy sauce

Cholula hot sauce (for mild: 3-4 dashes, medium 1/2-1 tsp, hot 1 1/2+ tsp)


Instructions

  1. Preheat oven to 425 degrees (F). Drizzle 1-2 tbsp olive oil over one large baking sheet.

  2. Prepare flax eggs in a small bowl, set aside.

  3. In a slightly larger bowl, combine half of the bread crumbs, flour, salt, and black pepper. Stir to combine. (only combine half of these ingredients because as you dip the cauliflower, the dry mixture will start to clump. Then mix the remaining ingredients).

  4. Dunk each cauliflower floret into the flax egg mixture, allow excess to run off, and then dunk in breading mixture. Press mixture into the cauliflower so it is completely covered. Spread each prepared cauliflower wing on the baking sheet. Repeat until all florets have been used. Drizzle remaining olive oil over top of cauliflower wings.

  5. Bake cauliflower wings for 20-25 min at 425. (complete step 6 during this time). Toss/stir and then bake for another 5-10 min. Allow to cool slightly.(~5 min).

  6. While cauliflower wings are baking, prepare the Honey Garlic Sauce. Combine all sauce ingredients and whisk to combine. Microwave in 30 sec intervals, stirring each time, until sauce thickens enough for your preference (you can also pour sauce in a small sauce pan and heat over medium-low heat until it thickens, stirring frequently).

  7. Drizzle sauce over wings and serve! (Tip: I would not recommend tossing the wings in the sauce! It will cause all of the breading to fall off of the cauliflower wings. No good.)
