Naturally Sweet Apple Crisp

Feeling like apple pie? Of course you are.
Maybe you don't feel like putting in all the effort to make an apple pie from scratch, but at the same time a store bought crust or pie just isn't quite the same. Well, this apple crisp is your solution. You can make this delicious dessert from scratch in less than an hour and still satisfy your apple pie craving.
This apple crisp is not only delicious, but is also sweetened almost entirely with natural sugar. With the exception of a small spoonful of brown sugar and a splash of vanilla extract and maple syrup, the sweetness of this dish comes from a variety of fruits. Apples, of course, but also lemon, orange, and dates. You can enjoy this dessert guilt-free knowing that you are not filling your stomach with processed sugars.
As with any apple-pie-like dessert, a scoop of dairy free ice cream on top is a complete game-changer. I personally prefer ice cream made from oat milk because it closely matches the creaminess of real ice cream, but a cashew milk base is also quite creamy!

Naturally Sweet Apple Crisp

Serves: ~6 servings
Ingredients
Apple Filling
4 gala apples, peeled & chopped
1 tbsp cinnamon
1 tsp pumpkin pie spice
1 tbsp brown sugar
1 tbsp lemon juice
1 tbsp orange juice
Crisp Topping
1 cup rolled oats
1/3 cup all-purpose flour
1 tbsp cinnamon
1 tsp nutmeg
1 tsp ground cardamon
1/4 cup coconut oil, melted (small amount extra to grease baking dish)
2 tbsp maple syrup
2 tbsp date paste (3 pitted dates + 2 tbsp warm water, mashed with fork until paste forms)
1 tsp vanilla extract
Instructions
Preheat oven to 375 degrees (F). Grease and 8x8 glass baking dishing by dipping a paper towel in the coconut oil and spreading it evenly on the baking dish, including the sides.
In a large mixing bowl, combine the apples, cinnamon, and pumpkin pie spice. Use a rubber spatula to gently mix. Add lemon and orange juice and mix again. Set aside.
In another mixing bowl, combine rolled oats, flour, cinnamon, nutmeg, and cardamon. Use whisk or fork to combine. Then add coconut oil, maple syrup, date paste, and vanilla extract. Stir until well combined.
Pour the apple filling mixture into the baking dish first. Use the rubber spatula to even out the apples. Pour topping mixture over the apples and spread evenly.
Cover baking dish with aluminum foil and bake at 375 for 20 minutes. Then remove foil and bake for an additional 15 minutes. Allow apple crisp to cool for 10 minutes before serving. Top with dairy free ice cream of choice and enjoy!
