Hello! My name is Lindsey Joy. I created Joyful Vegan as my passion for cooking and baking grew exponentially after making some significant changes to my diet. For about one year now I have lived an "almost vegan" lifestyle. I am very mindful about the foods that I put into my body, and was so excited about how great I felt - regarding energy, skin, and gut health - once I switched to a primarily plant-based diet.
One aspect of my life that has been important for me to maintain over the last year is remembering that my happiness is one of the most important aspects of my overall health. Therefore, I refuse to jeopardize it for the sake of a strict diet. So, what do I do? I eat CHEESY pizza sometimes. I chow down on DAIRY ice cream on occasion. Because some days that's just what I need to feel happy, and that is just fine with me.
Joyful Vegan is an outlet for me to share food-based creativity with you all and encourage you all to be creative in the kitchen. Most importantly, I hope that Joyful Vegan reminds you to live happily healthy!
